味噌加工実習を行いました。
食品科学科食品科学科１、２年生の実習で味噌の加工実習を行いました。
床もみや切り返しをして麹をつくり、さらに塩切りを行い塩切り麹とし、蒸煮大豆と合わせて仕込みました。
実習の際、麹菌の菌糸が米粒の表面から中に侵入していく状態を見たり、仕込みの際には、発酵容器に空気が入らないようにすき間なく詰める作業方法を、体験をとおして学習しました。
